Nachdem der Amarone-Wein von seinen Trestern getrennt wurde, bleiben diese etwa 5 Tage in Kontakt mit dem Valpolicella-Wein, wodurch eine neue G\u00e4rung ausgel\u00f6st wird, die dem Wein mehr Struktur und getrocknete Noten verleiht. Das Ergebnis ist ein gut strukturierter und ausgewogener Wein. Anschlie\u00dfend reift der Wein anderthalb Jahre in gro\u00dfen Holzf\u00e4ssern.<\/p>\n<p>Dieser Wein wird aus einer Cuv\u00e9e von Corvina (55 %), Corvinone (25 %) und Rondinella (20 %) hergestellt, die im Weinberg Marcellise von Brigaldara wachsen, in einer H\u00f6he von 150\u2013250 m \u00fcber dem Meeresspiegel. Die Reben werden nach den Erziehungssystemen Guyot und Pergola Veronese gezogen, und die Trauben werden in der zweiten Septemberh\u00e4lfte von Hand geerntet.<\/p>\n<p>Bei der Verkostung zeigt der Il Vegro Valpolicella Ripasso eine leuchtend rubinrote Farbe und verstr\u00f6mt Aromen von roter Pflaume, Marzipan und exotischen Bl\u00fcten, begleitet von einer feinen salzigen Note. Am Gaumen ist der Wein saftig und dicht gewoben, mit einer ausgepr\u00e4gten S\u00e4ure, die die Aromen von roten Fr\u00fcchten und Gew\u00fcrzen bewahrt. Der Abgang ist gepr\u00e4gt von klarer Frucht und guter L\u00e4nge.
