Die Veredelung dieses Weines erfolgt durch den gezielten Einsatz franz\u00f6sischer Eichenf\u00e4sser, wodurch sich ausgepr\u00e4gte organoleptische Eigenschaften entwickeln, die ihn vom klassischen Amarone della Valpolicella Classico DOCG unterscheiden.<\/p>\n<p>W\u00e4hrend der Lese werden ausschlie\u00dflich lockerbeerige Trauben gesammelt, um eine bessere Luftzirkulation und damit ein optimales Trocknen zu erm\u00f6glichen. Diese Trauben werden im September sorgf\u00e4ltig von Hand gelesen und auf flachen Kunststoffgittern bis Januar getrocknet \u2013 bei kontrollierter Luftfeuchtigkeit und Temperatur. Dieser Prozess wird als \u201eAppassimento\u201c bezeichnet.<\/p>\n<p>Nach dem Abbeeren erfolgt die Rotwein-Vinifikation. Anschlie\u00dfend wird die Maischeg\u00e4rung mit einheimischen Hefen in Edelstahltanks \u00fcber einen Zeitraum von etwa 20 bis 30 Tagen durchgef\u00fchrt. Die Reifung erfolgt in Eichenf\u00e4ssern aus Allier, Tron\u00e7ais und Vosges, wobei 30 % neues Holz und 70 % bereits gebrauchte F\u00e4sser verwendet werden. Der Wein reift 7\u20138 Jahre, bevor er abgef\u00fcllt wird \u2013 danach erfolgt eine weitere Flaschenreifezeit von mindestens 12 Monaten.<\/p>\n<p>Die Verkostungsnotizen zeigen einen intensiven, kraftvollen Wein mit reichem Tanningehalt und Aromen von Schwarzkirsche.
