Dieses Verm\u00e4chtnis hat dem Weingut den Ruf eingebracht, einige der begehrtesten, sammelw\u00fcrdigsten und gefeiertsten Weine der Region hervorzubringen. Da der Jahrgang von vielen als einer der besten der j\u00fcngeren Vergangenheit gilt, verk\u00f6rpert dieser Wein wahre Sublimit\u00e4t \u2013 ein reiches Geschmied aus Aromen, das mit der Zeit nur noch an Tiefe gewinnen wird.<\/p>\n<p><strong>Vinifikations\u00adprozess:<\/strong> Die Trauben werden sorgf\u00e4ltig ausgew\u00e4hlt und im <em>fruttaio<\/em> so ausgebreitet, dass eine maximale Gleichm\u00e4\u00dfigkeit, optimale Appassimento-Entwicklung und die Bildung von Botrytis zur weiteren Zuckerkonzentration beg\u00fcnstigt werden. Ende Januar werden die Trauben gekeltert, etwa 20 Tage mazeriert und anschlie\u00dfend mit nat\u00fcrlichen Hefen \u00fcber 45 Tage vergoren. Danach reift der Wein volle 7 Jahre in slawonischen Eichenf\u00e4ssern und verwandelt sich langsam in seine komplexe Endform.<\/p>\n<p><strong>Reifeprozess:<\/strong> Der Amarone della Valpolicella DOP Classico von Quintarelli reift typischerweise mindestens 7 Jahre in slawonischer Eiche.
