Die Reben werden im Guyot System erzogen und bestehen aus 50 % Corvina, 40 % Corvinone und 10 % Rondinella.<\/p>\n<p>Die Lese beginnt in der zweiten Septemberh\u00e4lfte, wenn die besten Trauben der \u00e4ltesten Weinberge sorgf\u00e4ltig ausgew\u00e4hlt und f\u00fcr die nat\u00fcrliche Trocknung im historischen Geb\u00e4ude ausgelegt werden. Die Vinifikation startet im Dezember mit einer kurzen Kaltmazeration, gefolgt von einer langen G\u00e4rung bei niedriger Temperatur mit t\u00e4glichem Remontage und Delestage. Anschlie\u00dfend reift der Wein 36 Monate in neuen franz\u00f6sischen Barriques und Amphoren sowie weitere 36 Monate in der Flasche mit Naturkork.<\/p>\n<p>Im Glas zeigt er ein tiefes Rubinrot mit leuchtender Intensit\u00e4t. In der Nase finden sich Noten von Rosinen und getrockneten Feigen, begleitet von Ankl\u00e4ngen an Malz, dunkle Schokolade und getrocknete Beeren, erg\u00e4nzt durch schwarzen Pfeffer und eine feine Note eingelegter Fr\u00fcchte. Am Gaumen sind die Tannine gut eingebunden, eine klare S\u00e4ure tr\u00e4gt die Frucht und verleiht Frische und Spannung. Der Abgang ist lang und anhaltend.
