Entstanden aus einem au\u00dfergew\u00f6hnlichen Jahrgang, verk\u00f6rpert diese Abf\u00fcllung Geduld und Kontinuit\u00e4t und ehrt die Familie Guglielmi, die im neunzehnten Jahrhundert in Jago mit dem Rebanbau begann. Es ist eine R\u00fcckkehr zu den Urspr\u00fcngen, gepr\u00e4gt von Zeit und Tradition.<\/p>\n<p>Er wird aus Corvina Veronese, Corvinone, Rondinella und Molinara erzeugt, die in den eigenen Weinbergen in Jago in Negrar innerhalb der Valpolicella Classica nahe Colle Masua wachsen. Die Weinberge liegen zwischen 240 und 252 Metern \u00fcber dem Meeresspiegel mit \u00f6stlicher Ausrichtung. Die B\u00f6den sind kalkhaltig, marinen Ursprungs, eher flachgr\u00fcndig und von mittlerer Fruchtbarkeit. Die Reben werden teils in Pergola Veronese mit 1.800 bis 2.000 Rebst\u00f6cken pro Hektar, teils im Guyot System mit 3.300 bis 4.000 Rebst\u00f6cken pro Hektar erzogen. Der Ertrag liegt zwischen 80 und 100 Doppelzentnern pro Hektar, wobei nur die besten Trauben ausgew\u00e4hlt werden.<\/p>\n<p>Die Lese erfolgt von Hand zwischen Mitte September und Anfang Oktober. Die Trauben werden sorgf\u00e4ltig selektiert und in kleinen Kisten getrocknet, wo sie \u00fcber drei bis vier Monate etwa 30 Prozent ihres urspr\u00fcnglichen Gewichts verlieren. Nach sanfter Entrappung und Pressung findet die G\u00e4rung in Edelstahltanks bei kontrollierten Temperaturen zwischen 10 und 18 \u00b0C statt. Die Maischestandzeit dauert vier bis sechs Wochen mit t\u00e4glichem Umpumpen, gefolgt von der malolaktischen G\u00e4rung im Fr\u00fchjahr.<\/p>\n<p>Der Ausbau pr\u00e4gt die Identit\u00e4t dieses Weines entscheidend. Nach dem Verbleib im Stahl bis April reift er zw\u00f6lf Monate in 500 Liter franz\u00f6sischen Eichenf\u00e4ssern und anschlie\u00dfend siebzehn Jahre in gro\u00dfen slawonischen Eichenf\u00e4ssern von 1.200 bis 2.500 Litern, bevor er weitere zw\u00f6lf Monate in der Flasche lagert. Achtzehn Jahre Holzreifung verleihen ihm eine feine Textur und au\u00dfergew\u00f6hnliche aromatische Tiefe.<\/p>\n<p>Im Glas zeigt er sich granatrot. Die Nase ist gereift und vielschichtig, mit intensiven Kirschnoten, die sich mit Schokolade und Kaffee verbinden, erg\u00e4nzt durch aromatische Kr\u00e4uter und feine Ankl\u00e4nge von Nelke, Pfeffer und Ingwer. Am Gaumen ist er tief und konzentriert, geschmeidig und weich, mit noch pr\u00e4senten, jedoch durch die Zeit verfeinerten Tanninen. Eine lebendige S\u00e4ure sorgt f\u00fcr Balance, Kraft und Frische in einem langen und harmonischen Verlauf.<\/p>\n<p>Mit 15,5 Prozent Alkohol und einer Produktion von nur 1.306 Flaschen ist er ein seltener Amarone. Er sollte bei 18 \u00b0C in gro\u00dfen Burgundergl\u00e4sern serviert werden. Als Meditationswein eignet er sich hervorragend zu dunkler Schokolade und passt ebenso zu rotem Fleisch, Wild, Hofgefl\u00fcgel und halbfestem K\u00e4se.
