Basierend auf der Methode der Familie Dal Forno wird hier derselbe Anspruch an Pr\u00e4zision, strenge Selektion und Kontrolle angewendet, der sonst dem Amarone vorbehalten ist. Das Ergebnis ist ein Valpolicella mit au\u00dfergew\u00f6hnlicher Tiefe und Klarheit.<\/p>\n<p>Die Cuv\u00e9e ist klassisch aufgebaut: 70% Corvina und Corvinone, 20% Rondinella sowie kleine Anteile von Croatina und Oseleta. Entscheidend f\u00fcr den Stil ist die Herstellungsmethode mit 70% frischen und 30% getrockneten Trauben. Dadurch entsteht ein nat\u00fcrliches Gleichgewicht zwischen Konzentration und Frische, ohne dass der Wein schwer wirkt.<\/p>\n<p>Die Trauben stammen aus den H\u00fcgeln von Illasi, wo kalkhaltige, schluffige und tonreiche B\u00f6den Struktur und Spannung verleihen. Nach sorgf\u00e4ltiger Handlese wird ein Teil der Trauben direkt vinifiziert, w\u00e4hrend der restliche Anteil etwa 60 Tage lang getrocknet wird. Die G\u00e4rung erfolgt temperaturkontrolliert im Edelstahltank, gefolgt von einer langen Reifezeit von 24 Monaten in Tonneaux und weiteren 24 Monaten in der Flasche.<\/p>\n<p>In der Nase zeigen sich vielschichtige Aromen von Schwarzkirsche und Pflaume, begleitet von Noten von Mokka, Veilchen, wei\u00dfem Pfeffer und einer feinen mineralischen Nuance. Am Gaumen wirkt der Wein harmonisch, pr\u00e4zise und dynamisch, mit einer gelungenen Verbindung von Struktur und Frische, die ihn besonders trinkfreudig macht.<\/p>\n<p>Dieser Valpolicella Superiore geht \u00fcber das klassische Profil hinaus und verbindet Tiefe und Frische auf sehr ausgewogene Weise.
