Er vereint 35% Corvina, 30% Corvinone, 30% Rondinella und 5% Molinara, wobei jede Rebsorte ihren Teil zum Charakter beitr\u00e4gt.<\/p>\n<p>Die Trauben wachsen auf den sonnigen H\u00fcgeln bei Negrar di Valpolicella, in H\u00f6henlagen zwischen 280 und 450 Metern \u00fcber dem Meeresspiegel. Die Reben, zwischen 10 und 50 Jahre alt, werden sowohl im Pergola-Veronese- als auch im Guyot-System erzogen, mit einer Dichte von 6.000 St\u00f6cken pro Hektar. Ihre S\u00fcd-Ost- und S\u00fcd-West-Ausrichtung gibt den Trauben die langen Sonnenstunden, die sie f\u00fcr die volle Reife brauchen.<\/p>\n<p>Die Lese beginnt Mitte September mit einer sorgf\u00e4ltigen Auswahl der Trauben. Nach der Ernte kommen die Trauben in den Fruttaio, wo sie vier Monate lang auf Kunststoffplateaus nat\u00fcrlich trocknen. Im Januar werden sie erneut sortiert, gepresst und in Tanks \u00fcberf\u00fchrt, wo die G\u00e4rung mit ausgew\u00e4hlten Hefen beginnt und \u00fcber 50 Tage l\u00e4uft, mit regelm\u00e4\u00dfigen \u00dcberpumpungen und D\u00e9lestage, um Tiefe und Struktur aufzubauen. Anschlie\u00dfend setzt sich der Wein in Stahltanks und Holzf\u00e4ssern, wo er seine G\u00e4rung abschlie\u00dft und seine lange Ruhe beginnt.<\/p>\n<p>Der Amarone Classico reift 48 Monate in einer Mischung aus 55% zweifach belegten Tonneaux zu 500 Litern, 30% in Barriques zu 225 Litern und 15% in F\u00e4ssern zu 25 Hektolitern, was Holz und Frucht ins Gleichgewicht bringt und dem Wein echte F\u00fclle und Tiefe verleiht. Danach wird er auf die Flasche gef\u00fcllt und ruht weitere sechs Monate vor der Freigabe.
