Corvina, Corvinone, Rondinella, Croatina und Oseleta trocknen 70 bis 90 Tage lang und verlieren dabei rund 40 % ihres Gewichts, bevor eine langsame G\u00e4rung und eine sehr lange Ruhezeit folgen: Der Wein verbringt etwa sechs Jahre in franz\u00f6sischen und amerikanischen Barriques und danach noch ein weiteres Jahr in der Flasche, bevor er den Keller verl\u00e4sst.<br \/>\nDiese Geduld bringt einen Amarone von ungew\u00f6hnlicher Tiefe hervor: Schicht um Schicht getrockneter schwarzer Fr\u00fcchte, Vanille, schwarzem Pfeffer, Kakao und balsamischen T\u00f6nen, vollmundig und samtig mit weichen Tanninen. Der 2015 ist jetzt bereits offen und noch weit von seinem H\u00f6hepunkt entfernt. Eine Stunde dekantieren und bei 18 \u00b0C zu den kr\u00e4ftigsten Gerichten servieren, die Sie haben: geschmortes Wildbret, Brasato, gereifter K\u00e4se oder ein langer venezianischer Abend, der mit Fegato alla veneziana und stillen Gl\u00e4sern endet.<\/p>\n<p>Carlo Ferrag\u00f9 bewirtschaftet rund acht Hektar roter Rebsorten im Val d&#8217;Illasi, \u00f6stlich von Verona, auf etwa 240 Metern H\u00f6he, dazu einen weiteren Hektar Olivenb\u00e4ume.
