Comme dans les grandes r\u00e9gions viticoles, les d\u00e9tails techniques et r\u00e9glementaires de l\u2019Amarone sont nombreux.<\/p>\n<p>Ce guide propose un rep\u00e8re approfondi pour comprendre les r\u00e8gles qui permettent \u00e0 une bouteille de porter le nom <strong>Amarone della Valpolicella DOCG<\/strong>. Il suit les principaux articles du <em>disciplinare<\/em>, sans reproduire toutes ses d\u00e9limitations et dispositions techniques.<\/p>\n<p>La r\u00e9f\u00e9rence est le <a href=\"https:\/\/www.masaf.gov.it\/flex\/cm\/pages\/ServeBLOB.php\/L\/IT\/IDPagina\/20309\">cahier des charges consolid\u00e9 publi\u00e9 par le minist\u00e8re italien<\/a>, incluant les modifications du 3 ao\u00fbt 2023. Une simple liste de communes ne remplace donc pas la d\u00e9limitation parcellaire.<\/p>\n<p>L\u2019aire comprend tout ou partie de 19 communes :<\/p>\n<ul>\n<li>Marano di Valpolicella<\/li>\n<li>Fumane<\/li>\n<li>Negrar di Valpolicella<\/li>\n<li>Sant\u2019Ambrogio di Valpolicella<\/li>\n<li>San Pietro in Cariano<\/li>\n<li>Dolc\u00e8<\/li>\n<li>Verona<\/li>\n<li>San Martino Buon Albergo<\/li>\n<li>Lavagno<\/li>\n<li>Mezzane di Sotto<\/li>\n<li>Tregnago<\/li>\n<li>Illasi<\/li>\n<li>Colognola ai Colli<\/li>\n<li>Cazzano di Tramigna<\/li>\n<li>Grezzana<\/li>\n<li>Pescantina<\/li>\n<li>Cerro Veronese<\/li>\n<li>San Mauro di Saline<\/li>\n<li>Montecchia di Crosara<\/li>\n<\/ul>\n<p>Des p\u00e9rim\u00e8tres particuliers d\u00e9finissent les mentions Classico et Valpantena.<\/p>\n<p>[\/vc_column_text][\/vc_column][vc_column width=&#8221;1\/6&#8243;][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/6&#8243;][\/vc_column][vc_column width=&#8221;2\/3&#8243;][vc_column_text text_larger=&#8221;no&#8221; woodmart_inline=&#8221;no&#8221;]<\/p>\n<h2>Article 4 \u2014 La vigne et les rendements<\/h2>\n<p>\u00catre situ\u00e9 dans la bonne zone et cultiver les bons c\u00e9pages ne suffit pas. Les conditions de culture doivent permettre l\u2019expression des caract\u00e9ristiques de l\u2019appellation.<\/p>\n<p>Les vignobles de fond de vall\u00e9e implant\u00e9s sur des sols tourbeux ou excessivement humides sont exclus. Il ne s\u2019agit pas d\u2019une interdiction g\u00e9n\u00e9rale de tous les terrains plats. Les raisins destin\u00e9s \u00e0 l\u2019Amarone doivent provenir de vignes ayant atteint au moins leur <strong>quatri\u00e8me cycle v\u00e9g\u00e9tatif<\/strong>.<\/p>\n<p>Les formes de conduite admises comprennent le palissage en espalier et la pergola veronese inclin\u00e9e, simple ou double, avec des dispositions pour certains vignobles ant\u00e9rieurs. Le texte encadre la taille et la charge en bourgeons. Pour les plantations concern\u00e9es, la densit\u00e9 minimale est de <strong>3 300 pieds par hectare<\/strong>, avec possibilit\u00e9 de r\u00e9duction autoris\u00e9e sur certaines terrasses \u00e9troites.<\/p>\n<p>Le for\u00e7age est interdit ; <strong>l\u2019irrigation de secours est autoris\u00e9e<\/strong>. Le rendement maximal de base est de <strong>12 tonnes de raisins par hectare<\/strong>, les raisins devant pr\u00e9senter un titre alcoom\u00e9trique naturel potentiel d\u2019au moins 11 % vol. Ce seuil \u00e0 la r\u00e9colte ne doit pas \u00eatre confondu avec celui du vin fini.<\/p>\n<p>Lors d\u2019une ann\u00e9e favorable, une production globale sup\u00e9rieure dans la limite pr\u00e9vue ne signifie pas que tout l\u2019exc\u00e9dent devient Amarone. Les quantit\u00e9s revendiqu\u00e9es doivent rester dans les plafonds r\u00e9glementaires, avec une destination distincte pour les surplus.<\/p>\n<p>La s\u00e9lection pour l\u2019<a href=\"https:\/\/shop.allamarone.com\/fr\/what-is-appassimento\/\">appassimento<\/a> se fait au vignoble. La quantit\u00e9 mise \u00e0 s\u00e9cher ne peut d\u00e9passer <strong>65 % du rendement maximal de base<\/strong>. Le reste peut, dans les limites et conditions pr\u00e9vues, \u00eatre destin\u00e9 au <a href=\"https:\/\/shop.allamarone.com\/fr\/valpolicella-wine-styles\/\">Valpolicella ou au Valpolicella Ripasso<\/a>. Des dispositions particuli\u00e8res couvrent certaines situations traditionnelles et autorisations individuelles ; Classico et Valpantena font l\u2019objet de pr\u00e9cisions propres. Le texte ne pose pas une obligation g\u00e9n\u00e9rale selon laquelle toute cave devrait \u00eatre enregistr\u00e9e depuis trois ans avant de produire son premier Amarone.<\/p>\n<p>Le rendement maximal des raisins en vin fini est de <strong>40 %<\/strong>. Une mesure annuelle peut le r\u00e9duire. Apr\u00e8s s\u00e9chage, les raisins doivent assurer un titre alcoom\u00e9trique naturel potentiel d\u2019au moins <strong>14 % vol.<\/strong><\/p>\n<p>L\u2019appassimento peut \u00eatre assist\u00e9 par des \u00e9quipements de conditionnement de l\u2019air, \u00e0 des temp\u00e9ratures analogues \u00e0 celles des proc\u00e9d\u00e9s traditionnels. <strong>Les syst\u00e8mes de d\u00e9shumidification utilisant la chaleur sont exclus<\/strong> : il est donc inexact de dire que toute aide technique ou toute d\u00e9shumidification est interdite.<\/p>\n<p>La vinification ne peut normalement commencer avant le <strong>1<sup>er<\/sup> d\u00e9cembre<\/strong>. La r\u00e9gion V\u00e9n\u00e9tie peut autoriser une date ant\u00e9rieure sur demande document\u00e9e du Consorzio lorsque les conditions climatiques le n\u00e9cessitent.<\/p>\n<p>Avant commercialisation, l\u2019<a href=\"https:\/\/shop.allamarone.com\/fr\/amarone-ageing\/\">\u00e9levage minimal<\/a> est de <strong>deux ans \u00e0 compter du 1<sup>er<\/sup> janvier suivant l\u2019ann\u00e9e de r\u00e9colte<\/strong>. Le titre alcoom\u00e9trique effectif minimal est de <strong>14 % vol.<\/strong>, l\u2019acidit\u00e9 totale minimale de <strong>5 g\/l<\/strong> et l\u2019extrait non r\u00e9ducteur minimal de <strong>28 g\/l<\/strong>, port\u00e9 \u00e0 <strong>32 g\/l pour la Riserva<\/strong>.<\/p>\n<p>Le plafond de sucre r\u00e9siduel n\u2019est pas un chiffre unique de 12 g\/l. Il est de <strong>9 g\/l \u00e0 14 % vol.<\/strong>, augment\u00e9 de 0,1 g\/l par tranche de 0,10 % vol. suppl\u00e9mentaire jusqu\u2019\u00e0 16 % vol., puis de 0,15 g\/l par tranche de 0,10 % vol. au-del\u00e0. Par exemple, le plafond est de 11 g\/l \u00e0 16 % vol.<\/p>\n<p>Le texte d\u00e9crit une robe rouge soutenue pouvant \u00e9voluer vers le grenat, un bouquet caract\u00e9ristique et affirm\u00e9, ainsi qu\u2019une bouche pleine, velout\u00e9e et chaleureuse. Ces crit\u00e8res participent au contr\u00f4le de la typicit\u00e9, aux c\u00f4t\u00e9s des analyses.<\/p>\n<h2>Article 7 \u2014 Les mentions sur l\u2019\u00e9tiquette<\/h2>\n<p>Des qualificatifs non pr\u00e9vus, tels que \u00ab extra \u00bb, \u00ab fine \u00bb ou \u00ab scelto \u00bb, ne peuvent \u00eatre ajout\u00e9s \u00e0 l\u2019appellation. Les noms, raisons sociales et marques restent possibles s\u2019ils ne sont ni laudatifs ni trompeurs. Le nom d\u2019une cuv\u00e9e, comme <a href=\"https:\/\/shop.allamarone.com\/fr\/vin\/amarone-campolongo-di-torbe\/\">Campolongo di Torbe<\/a>, n\u2019est pas une cat\u00e9gorie r\u00e9glementaire sup\u00e9rieure.<\/p>\n<p>La mention <em>vigna<\/em> doit \u00eatre suivie du toponyme correspondant et respecter des conditions pr\u00e9cises de d\u00e9claration, de tra\u00e7abilit\u00e9 et de s\u00e9paration des lots pendant le s\u00e9chage, la vinification et l\u2019\u00e9levage. Le <strong>mill\u00e9sime est obligatoire<\/strong>.<\/p>\n<h2>Article 8 \u2014 Les bouteilles et fermetures<\/h2>\n<p>Le texte consolid\u00e9 pr\u00e9voit des bouteilles traditionnelles en verre d\u2019une capacit\u00e9 maximale de <strong>15 litres<\/strong>. La fermeture doit employer un bouchon ras de bague ; une capsule \u00e0 vis \u00e0 jupe longue est \u00e9galement admise pour les bouteilles jusqu\u2019\u00e0 <strong>0,250 litre<\/strong>. Les anciennes limites de 5 litres et de demi-bouteille ne correspondent donc plus \u00e0 cette version.<\/p>\n<p>[\/vc_column_text][\/vc_column][vc_column width=&#8221;1\/6&#8243;][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/6&#8243;][\/vc_column][vc_column width=&#8221;2\/3&#8243;][vc_column_text text_larger=&#8221;no&#8221; woodmart_inline=&#8221;no&#8221;]<\/p>\n<h2>Article 9 \u2014 Le lien avec le milieu g\u00e9ographique<\/h2>\n<p>Le cahier des charges explique ensuite ce qui relie le vin \u00e0 son origine. Les vall\u00e9es et les collines du pi\u00e9mont v\u00e9ronais forment un paysage tr\u00e8s vari\u00e9, entre le lac de Garde et les abords de la province de Vicence.<\/p>\n<p>Les Lessini, le lac et l\u2019exposition des coteaux contribuent \u00e0 un climat globalement mod\u00e9r\u00e9, avec des diff\u00e9rences locales importantes. Les sols proviennent de formations calcaires et dolomitiques, de basaltes et de d\u00e9p\u00f4ts morainiques ou fluviaux. Leur effet sur l\u2019alimentation en eau varie selon les parcelles.<\/p>\n<p>Altitude, pente et orientation influencent l\u2019ensoleillement et la ventilation.
