Ce vin structur\u00e9 et expressif est \u00e9labor\u00e9 selon la m\u00e9thode traditionnelle du \u201cripasso\u201d sur les peaux de raisin d\u2019Amarone, ce qui lui conf\u00e8re profondeur et un caract\u00e8re affirm\u00e9, perceptible aussi bien au nez qu\u2019en bouche. Audacieux tout en \u00e9tant \u00e9quilibr\u00e9, il refl\u00e8te un usage r\u00e9fl\u00e9chi des c\u00e9pages locaux et des techniques de vinification.<\/p>\n<p>L\u2019assemblage est principalement compos\u00e9 de Corvina (60 %), ainsi que de Corvinone, Rondinella, Oseleta, Coratina et Pipiona, tous cultiv\u00e9s selon le syst\u00e8me de pergoletta dans les vignobles proches de Fumane di Valpolicella. Le mo\u00fbt subit une premi\u00e8re fermentation sur les peaux pendant deux semaines, suivie d\u2019une seconde fermentation gr\u00e2ce au proc\u00e9d\u00e9 du \u201cripasso\u201d sur les peaux de raisin d\u2019Amarone. Le vin est ensuite \u00e9lev\u00e9 pendant 12 mois en f\u00fbts de 50 hectolitres, puis affin\u00e9 davantage dans des f\u00fbts plus petits de 7 hectolitres. Une fois mis en bouteille, il continue de m\u00fbrir, gagnant en complexit\u00e9 et en harmonie.<\/p>\n<p>Dans le verre, il pr\u00e9sente une couleur rouge rubis profonde. Le nez s\u2019ouvre sur des notes fruit\u00e9es s\u00e9duisantes, enrichies par des couches d\u2019\u00e9pices. En bouche, il offre une belle structure, de la chaleur et des tanins souples qui s\u2019int\u00e8grent parfaitement \u00e0 l\u2019\u00e9quilibre g\u00e9n\u00e9ral. Ce vin a \u00e9t\u00e9 reconnu par les principaux guides sp\u00e9cialis\u00e9s, soulignant le travail m\u00e9ticuleux derri\u00e8re chaque bouteille.
