Cette cuv\u00e9e d\u2019exception rend hommage \u00e0 la r\u00e9gion unique de la Valpolicella et t\u00e9moigne de l\u2019excellence associ\u00e9e \u00e0 notre nom.<\/p>\n<p>Ce vin magnifique provient de c\u00e9pages compos\u00e9s de 80 % Corvina, 10 % Rondinella, 10 % Oseleta et Croatina. Ils sont cultiv\u00e9s avec soin sur notre pr\u00e9cieux vignoble du domaine Costalunga, \u00e2g\u00e9 de 20 ans, situ\u00e9 \u00e0 S. Ambrogio di Valpolicella, avec un rendement de 80 quintaux par hectare. Chaque plant porte 6 \u00e0 7 bourgeons, illustrant notre engagement pour une croissance contr\u00f4l\u00e9e et une qualit\u00e9 prioritaire sur la quantit\u00e9.<\/p>\n<p>Notre vignoble est situ\u00e9 \u00e0 une altitude moyenne de 300 \u00e0 350 m\u00e8tres au-dessus du niveau de la mer, sur un sol argilo-calcaire riche en roches. Cet emplacement exceptionnel garantit une exposition optimale au soleil et permet aux racines de s\u2019enfoncer profond\u00e9ment dans un sol marneux pour puiser les sels min\u00e9raux n\u00e9cessaires \u00e0 leur \u00e9panouissement.<\/p>\n<p>Chaque grappe est r\u00e9colt\u00e9e \u00e0 la main au d\u00e9but du mois d\u2019octobre, selon le syst\u00e8me de taille traditionnel Guyot, garantissant une vendange s\u00e9lective et durable. Apr\u00e8s la r\u00e9colte, les raisins sont mis \u00e0 s\u00e9cher dans de petites caisses en bois de 5 kg pendant environ quatre mois dans des pi\u00e8ces bien ventil\u00e9es et s\u00e8ches (fruttai). Ce n\u2019est qu\u2019en janvier, apr\u00e8s le processus naturel de s\u00e9chage appel\u00e9 appassimento, que les raisins sont press\u00e9s. Ils subissent ensuite une lente fermentation sur les peaux durant 15 \u00e0 20 jours, puis sont \u00e9lev\u00e9s pendant 10 ans dans un f\u00fbt de ch\u00eane slavonien de 30 hl.<\/p>\n<p>Le r\u00e9sultat est un Amarone 2008 Archivio Storico Zenato \u00e0 la robe rouge rubis intense, \u00e9voluant progressivement vers le grenat. Le bouquet est puissant, d\u00e9bordant de parfums fruit\u00e9s de cerise, de griotte et de petits fruits rouges, accompagn\u00e9s d&#8217;une touche \u00e9pic\u00e9e qui \u00e9veille les sens. En bouche, vous d\u00e9couvrirez une structure chaleureuse, pleine et riche.<\/p>\n<p>\u00c0 servir \u00e0 une temp\u00e9rature de 18 \u00b0C, de pr\u00e9f\u00e9rence apr\u00e8s un carafage d&#8217;une heure pour lui permettre de respirer et d\u2019exprimer toute sa personnalit\u00e9. C\u2019est un compagnon id\u00e9al pour de nombreux plaisirs gastronomiques : viandes r\u00f4ties, gibier, steak grill\u00e9 et fromages affin\u00e9s.
