D\u00e9di\u00e9 \u00e0 la famille Guglielmi, qui cultiva la vigne \u00e0 Jago au XIXe si\u00e8cle, il repr\u00e9sente un retour aux origines et n\u2019est produit que lors des meilleurs mill\u00e9simes. Apr\u00e8s dix ann\u00e9es d\u2019\u00e9levage en grands f\u00fbts de ch\u00eane dans une cave sombre et fra\u00eeche, il atteint une profondeur et une harmonie remarquables. Seules 1 200 bouteilles ont \u00e9t\u00e9 produites.<\/p>\n<p>Les raisins proviennent des vignobles du domaine \u00e0 Jago, commune de Negrar en Valpolicella, dans la zone historique de la Valpolicella Classica pr\u00e8s de Colle Masua. Les vignes se situent entre 240 et 252 m\u00e8tres d\u2019altitude avec une exposition est. Les sols sont calcaires, d\u2019origine marine, peu profonds et de fertilit\u00e9 moyenne. Les vignes sont conduites en Guyot avec une densit\u00e9 de 3 300 \u00e0 4 000 pieds par hectare. Le rendement varie entre 80 et 100 quintaux par hectare avec une s\u00e9lection rigoureuse des meilleures grappes.<\/p>\n<p>L\u2019assemblage repose principalement sur la Corvina Veronese et la Corvinone, compl\u00e9t\u00e9es par une petite proportion de Rondinella. Les vendanges sont manuelles entre mi-septembre et d\u00e9but octobre. Les grappes s\u00e9lectionn\u00e9es sont plac\u00e9es en petites cagettes pour un s\u00e9chage de trois \u00e0 quatre mois, perdant environ 30 pour cent de leur poids initial. Apr\u00e8s un \u00e9grappage et un foulage d\u00e9licats, la fermentation a lieu en cuves inox \u00e0 des temp\u00e9ratures comprises entre 10 et 18 \u00b0C. La mac\u00e9ration dure quatre semaines avec remontage quotidien, suivie de la fermentation malolactique au printemps.<\/p>\n<p>Le vin reste en cuve inox jusqu\u2019en avril, puis vieillit douze mois en tonneaux de ch\u00eane fran\u00e7ais de 500 litres et neuf ans en grands f\u00fbts de ch\u00eane slavonien de 2000 \u00e0 2500 litres, avant douze mois suppl\u00e9mentaires en bouteille. Sa robe est rouge grenat. Le nez offre des ar\u00f4mes de confiture, de cerise m\u00fbre et griotte, de fruits secs, d\u2019\u00e9pices, de tabac et de cacao. En bouche, il est riche, \u00e9pic\u00e9 et balsamique, ample et \u00e9l\u00e9gant, intense et persistant avec un bel \u00e9quilibre.<\/p>\n<p>Avec 16 pour cent d\u2019alcool, son potentiel de garde est de 15 \u00e0 20 ans. \u00c0 servir \u00e0 18 \u00b0C dans de grands verres. Il accompagne les fromages \u00e0 p\u00e2te semi-affin\u00e9e, les noix, amandes, noisettes, graines de courge et dattes, ainsi que les gibiers \u00e0 plumes comme la perdrix, le pigeon ou le faisan.
