Le 2015 Amarone della Valpolicella Classico est un assemblage de Corvinone 45%, Corvina 40% et Rondinella 15%, cultiv\u00e9 sur des vignes conduites en pergola traditionnelle et vendang\u00e9 \u00e0 la main. Seules les meilleures grappes sont s\u00e9lectionn\u00e9es et laiss\u00e9es \u00e0 s\u00e9cher pendant environ 120 jours avant le pressurage, un proc\u00e9d\u00e9 qui concentre les sucres, les ar\u00f4mes et la structure. La fermentation dure environ 45 jours avec une longue mac\u00e9ration pelliculaire, suivie de 42 mois d&#8217;\u00e9levage en grandes barriques de ch\u00eane de 50 hectolitres et de 12 mois suppl\u00e9mentaires de repos en bouteille avant la mise en vente. Le mill\u00e9sime 2015 en Valpolicella a \u00e9t\u00e9 chaud et sec, donnant des raisins d&#8217;une belle maturit\u00e9 et concentration, ce qui contribue \u00e0 la profondeur et \u00e0 la pl\u00e9nitude du vin \u00e0 16% d&#8217;alcool. Le vin a obtenu 93 points de Falstaff.<\/p>\n<p>Secondo Marco est le domaine de Fumane de Marco Speri, qu&#8217;il a fond\u00e9 en 2008 apr\u00e8s avoir quitt\u00e9 la maison familiale historique de Valpolicella pour travailler \u00e0 son propre compte. Il exploite 17 hectares dans la zone Classica et met en bouteille environ 85 000 bouteilles par an, conduisant les vignes sur une pergola qu&#8217;il a redessin\u00e9e en forme de Y pour offrir aux grappes de l&#8217;air et une lumi\u00e8re homog\u00e8ne.
