An organic Amarone by Domini Veneti
The organic offering from Domini Veneti, from a hot year that delivers great concentration and structure to the delight of Amarone purists.
Winemaking: hand-picked grapes with zero pesticides used. Dried in a traditional fruttaio for up to two months. Typically long fermentation (over thirty days) in stainless steel, before 18 months in barrel and 6-8 months in bottle prior to release.
Assemblage: corvina 60%, rondinella 15%, corvinone 15%, others 10%.
Soil: loamy clay, with some limestone.
Alcohol: 15.5%.
Colour: dark purple, little signs of reddening round the rim.
Aroma: intense, trademark Maraschino cherries and something like the memory of smokiness, like the smell of a cold day.
Palate: a wine with no shyness, forceful plum and fig flavours, with considerable pepperiness and cinnamon-like hints, as well as bold tannins and softness.
Ageability: over the next decade, expect nuance and tertiary flavours to develop to balance the strong fruit even more.
Pairing: game is, as ever, recommended (particularly hearty game such as venison), as well as rich foods like osso buco and oxtail stew. Strong, hard cheese will also work wonders.
