The vineyards are located at an altitude of 200-300 meters above sea level, with an average age of vines between 50 to 70 years. The vineyard yield is kept at a maximum of 5 to 6 tons per hectare.
The soil in the Ravazzol hill is predominantly clay-limestone with a high percentage of rocks and stones, which gives this wine its elegance and minerality. The grapes are carefully selected and dried on “arelle” until January or early February to lose about 40% of their weight, allowing for a unique concentration of flavors and aromas. The fermentation occurs with indigenous yeasts in stainless steel tanks, followed by malolactic fermentation in wood. Afterward, the wine is aged for 36 months in 30 hectoliter oak barrels and further aged for 8 months in the bottle.
