Amarone della Valpolicella DOC Classico by Le Ragose
The fourtieth anniversary for Le Ragose was also one of the great vintages of modern times for the Valpolicella region. Ageing well and with many years yet to go, this is not just a Classico, but a true classic.
Winemaking: hand-harvested grapes are aged on a plastic sheet for drying. The wine is fermented by indigenous yeasts in stainless steel for about a month, resting for much of the year before spending at least 7 years in Slavonian oak botti prior to bottling.
Assemblage: corvina 50%, rondinella 20%, corvinone 10%, and others.
Soil: principally clay, with some limestone.
Alcohol: 16%.
Colour: translucent, browning violet.
Aroma: concentrated blackberries and blackcurrants, hints of cocoa, dried tobacco leaf, forest floor.
Palate: continues to carry great power and purity of fruit, but has gained subtle and complex tertiary flavours, from rich dark chocolate to notes of walnuts and hazelnuts, and subtly balancing acidity.
Ageability: one decade in, it has at least another one left and possibly more.
Pairing: special-occasion food, the bigger the better (from rich meat stews to red wine risotto), and has the fruity intensity to even match up to certain desserts!
