Valpolicella Ripasso DOC Classico Superiore “Le Sassine” by Le Ragose
The location and the large number of old and new vines give “Le Sassine” its particular richness of flavours and fragrances.
The fruit is hand-picked, fermented in stainless steel for about 10-15 days with indigenous yeasts, then stored in steel tanks.
The presence of residual sugar from the Amarone pomace allows the fermentation and the extraction of its typical characteristics: aromas of dried fruit, alcohol and structure.
Aged in steel and oak barrels.
Black cherry, Christmas spice, leather, moist tobacco, honey, cedar and barbecue smoke all define the bouquet. Long and smooth with a round, velvety finish, it needs some air to open up.
It pairs well with meat and wild game.
