Valpolicella Ripasso DOC Classico Superiore by Monte Santoccio
Fermentation with maceration for 15 days in steel tanks. Refermentation (ripasso) on the pomace of Amarone for 20 days. Aging for 24 months in Slavonian oak barrels and barriques.
Intense ruby red colour. Full and complex aroma, with vinous tones and well-defined notes of ripe cherry and small red fruits. It is a fine wine with good structure and a savory and fruity taste, with final notes of spices and cocoa. It goes well with savory first courses, grilled meats, traditional boiled meats, medium-aged cheeses.
