Indulge in the exquisite taste of Roccolo Grassi’s Valfresca Valpolicella Superiore Doc 2015, a unique blend of Corvina, Corvinone, Rondinella, and Oseleta grapes. This wine is made from grapes harvested from a 2.5-hectare vineyard, exclusively reserved for producing this exceptional vintage during the best years.
The Valfresca vineyard is located at an altitude of 310 meters above sea level, with a southern exposure that perfectly complements the rich and calcareous soil. The Guyot training system with 7500 vines per hectare ensures optimum fruit quality and yield.
The grapes are harvested at the end of September when they have reached full polyphenolic maturity. The fermentation process takes place in stainless steel tanks at a temperature of 24-25°C for 20 days, with daily remontage. The malolactic fermentation occurs naturally in wood, enhancing the wine’s flavor profile.
The wine is then aged in oak barrels from Slavonia for 20 months, followed by an additional 5 years in the bottle, resulting in a total production of 3,900 bottles and 50 magnums.
