Veneto IGT “Appassimento Rosso” by Domini Veniti
A passito red wine of unusual assemblage, this is a love-letter to the soil from Domini Veneti.
Winemaking: the grapes are hand-harvested at the end of September. They then undergo 60 days of drying, quite a long time for a non-Amarone wine. They are finally destemmed and crushed, the fermentation taking place at 25°C and maceration lasting 10, with 3 punching-downs per day, to maximise extraction. The wine then undergoes malolactic fermentation and ageing in wood in order to round it out.
Assemblage: corvina 60%, corvinone 15%, rondinella 15%, other autochthonous varieties 10%.
Soil: predominantly clay with calcareous streaks.
Alcohol: 14%
Colour: ruby-red of a dense shade.
Aroma: complex, with notes of cherry and vanilla.
Palate: balanced, full and velvety, with a long finish and spicy notes.
Ageability: a very now-friendly wine.
Pairing: a wine for big fun food, grilled red meat or hard, dense cheeses.
