Valpolicella DOC “Latium” 2020 by Ilatium
Ilatium’s superclean, purest expression of Valpolicella.
Winemaking: grapes are picked during the last ten days of September and first ten days of October, then put into bins with a capacity of 4-5 quintals. They are then destemmed and pressed, then cryomacerated at temperatures of 7°C-8°C for 12-18 hours. Fermentation then takes place at a controlled temperature, with pumping over and delestage during the fermentation phase.
Assemblage: corvina and corvinone 70%, rondinella 20%, croatina and others 10%.
Soil: calcareous and clayey.
Colour: clear red ruby.
Aroma: fairly intense and complex with perceptible vinous notes and hints of ripe red berries.
Palate: dry, warm and smartly smooth on the palate, fresh with full tannins. Could nevertheless benefit from being served slightly chilled.
Ageability: to be drunk now.
Pairing: a dream with charcuterie and aged cheeses.
