Speri’s Valpolicella Ripasso Classico Superiore is a typically red from the Valpolicella Region, which shows itself with a complex elegance of a range of fruity and spicy aromas masterfully supported by the balance between freshness and alcohol level. A blend that comes from the beating heart of Valpolicella, and which starts from here to win the favor of Italian and American critics. An interesting label for the price, which at the table proves to be versatile with different food combinations.
This Valpolicella Ripasso Classico Superiore is born from a blend where, next to a 70% of Corvina Veronese, we also find a percentage of Rondinella, Molinara and other indigenous varieties allowed by the specification of the denomination. The vines grow in the parcels included around the municipalities of San Pietro in Cariano, Fumane and Negrar, with Veronese pergola systems. The must ferments in steel tanks at a controlled temperature; in the February following the harvest, the refermentation process takes place on the Amarone pomace, according to the Ripasso technique. Malolactic fermentation takes place in vitrified concrete tanks. The final aging lasts 12 months, and is carried out in wooden barrels with a capacity of 20 hectoliters.
Valpolicella Ripasso Classico Superiore Speri announces itself to the eye with a strong color, which recalls the hue of ruby red. The aromas that envelop the nose tell of an atmosphere linked to the scents of the undergrowth, embellished with spicy and balsamic references from which a touch of withered flowers also emerges. On the palate it has a round body, full and enveloping on the palate, characterized by a well-polished sip and a finish in which the taste recalls toasted wood. A reliable label, as demonstrated by the consistency of the scores obtained in the main Italian and international reference guides.
