Santocciorosso IGT Rosso Veronese by Monte Santoccio
The Corvina and Corvinone grapes are carefully sorted by hand, placed in small boxes and stored in the fruit cellar, where they will remain for 40-50 days. The other grapes (Merlot, Cabernet, Sangiovese) are harvested and fresh pressed.
Fermentation takes place in two phases: a first phase of premaceration lasting 10 days, then a second phase of alcoholic fermentation lasting 10 days. Aging in second passage French oak barrels for 12-24 months.
Intense garnet red colour. Wide and intense bouquet with hints of blackberry and ripe cherry. The taste is fruity, with fresh tannins and a spicy aftertaste. Warm and elegant.
It goes well with risotto, pasta, red meats and aged cheeses.
