Amarone della Valpolicella Docg Classico by Domini Veneti
A balanced vintage, producing beautifully balanced, classic expressions of Amarone. This from Domini Veneti is no different, combining punch with surprising softness, concentration with delicacy, and an alcoholic backbone no doubt assisted by a truly hot, dry summer.
Winemaking: hand-picked grapes, dried in the fruttaio for up to two months. Grapes fermented (at colder and warmer controlled temperatures) in stainless steel for about a month, with malolactic fermentation and barrel-ageing for 18 months and bottle-ageing for 6-8 months.
Assemblage: corvina 60%, rondinella 15%, corvinone 15%, others 10%.
Soil: loamy clay, with some limestone.
Alcohol: 15.5%.
Colour: deep ruby-garnet, purplish edges.
Aroma: dense, sweet berry fruit and touches of liquorice, cocoa and coffee.
Palate: full-on, big structured wine, immensely concentrated fruit, sweet oaky spice and strong undercurrents of pepper and tobacco.
Ageability: will continue to develop subtleties over the next ten years.
Pairing: a real monster that even some big dishes might struggle with – rich game is the best choice, as well as the mellow mood after dinner.
