The Valpolicella Superiore Ripasso Classico by Monte dei Ragni is obtained from a careful selection of Valpolicella grapes placed in trays and pressed in late November, then passed over the marc of dried grapes. The wine is refermented and aged in barrels. The production area is located in Marega in the municipality of Fumane in Valpolicella.
It is a hilly area, from 220 to 430 meters. s.l.m. full south-east exposure on limestone soils with a lot of skeleton. The sixth planted and trained is in Pergola Trentino, with 5600 vines / ha and a budding load of 33000-36000 / ha, remembering that in the corvina the first three buds generally do not bear fruit. Average age of the vineyard 25 years. The grapes are harvested in trays and placed under air porches for the first phase of pre-drying, followed by a soft pressing and fermented in steel containers at a controlled temperature.
The wine obtained is then re-fermented on the amarone pomace that is not completely exhausted. Refinement is done partly in tonneaux and partly in steel in varying proportions depending on the vintage.
