The Valpolicella Classico Superiore by Monte dei Ragni comes from a blend between Corvina, Rondinella and Molinara. These three varieties grow in the locality of Marenga, in the municipality of Fumane, at an altitude above sea level between 220 and 430 meters above sea level, within a terroir rich in skeleton and limestone. Once harvested, the bunches are dried in open air trays for 25-30 days, and then gently pressed. The must thus obtained ferments spontaneously in oak barrels thanks to the presence of indigenous yeasts, and the refermentation takes place on the Amarone pomace. The wine remains to refine for 30 months in oak tonneau, until it is ready to be bottled.
The Valpolicella Classico Superiore by Monte dei Ragni is presented to the eye with a ruby red color, with a particular concentration. The nose is layered, where the notes of well-ripened berries are enriched with spicy sensations, acquired during the slow period of aging of the wine in wood. On the palate it is full-bodied, vigorous, with a very enveloping sip thanks to a punctual tannic texture; the flavor that is perceived turns towards the savory. A real gem from Valpolicella, made in very few bottles intended only for the lucky ones: an opportunity not to be missed.
