The grapes for Amarone Acinatico are meticulously handpicked in September. Post-harvest, they are placed in trunks and left to rest in a specialized fruit-room. During this drying period, a series of biochemical processes, including the action of Botrytis Nobile, partially convert sugars into glycerine, enhancing the wine’s smoothness and body. The crushed grapes then undergo maceration and fermentation, contributing to the wine’s structured and aromatic profile. A two-year aging period in oak barrels further imparts a unique personality to the Amarone Acinatico.
