Le Guaite di Noemi’s Amarone della Valpolicella DOCG is a wine that embodies the passion and skill of its makers. The journey from vine to bottle is a meticulous process, beginning with the careful selection of grapes harvested at the beginning of October. These grapes are then left to dry for three months, intensifying their flavors and aromas.
After de-stemming and pressing, the grapes undergo cryomaceration, which enhances the extraction of color and aromas. Controlled-temperature fermentation with cultured yeasts and simultaneous malolactic fermentation create a complex and harmonious wine.
The wine is then matured for approximately 36 months in new French oak barriques, where it acquires an elegant and refined character. After bottling, it is aged for a further 48 months in the winery’s cellars, where it reaches its full potential.
The result is a wine with a deep ruby red color and garnet reflexes. On the nose, it offers notes of red cherry, black/blue berry, black plum, balsamic hint, fresh fennel, and pepper. The palate is smooth and seductive, with an appealing sapidity and optimal acidity. Frank notes of red and black fruits mature, spices, balsamic, fruits in spirits, and tertiary perfumes complete the tasting experience.
