Amarone della Valpolicella DOP Classico by Zymé
The Amarone della Valpolicella Classico is a deep and complex red wine, which embodies the passion and dedication of Celestino Gaspari, the beating heart and owner of the Zymé winery. It is a full-bodied wine, round and full on the palate thanks to the long aging period carried out in wood; to the nose it tells a story made of spices and hints of dried-out fruit.
The Amarone Classico by Zymé is a wine that is born from a strictly indigenous blend of red berried grapes: Corvina, Corvinone, Rondinella, Oseleta and Croatina. The age of these varieties is between 20 and 50 years, they are grown in the vineyards surrounding the Negrar area, within a subsoil consisting mainly of limestone and clay. The grapes are naturally dried for 90 days, and the berries are then softly pressed; a spontaneous fermentation in steel and cement containers then is carried out, with a maceration on the skins that lasts for over 60 days. Finally, it goes on to refinement, carried out first for 60 months in Slavonian oak barrels and then, after bottling, for at least another 12 months in the bottle.
This Amarone Classico by the Zymè winery has a particularly deep and concentrated ruby red color. The dried fruit peeps out on the nose and then presents a range rich in spicy aromas and nuances of licorice. Important on the palate, where it enters with a firm, energetic and vigorous sip, eager to show its complexity and its finely aromatic profile. It closes with a excellent persistent finish. A great classic of the Veneto viticulture interpreted in a label of absolute quality, to be drank by anyone who appreciates the great Italian reds.
