Amarone della Valpolicella DOP Classico by Zymé
Winemaker Celestino Gaspari’s signature expression of Valpolicella’s most famous style. Famous for an old school approach married with modern precision, expect beautifully developed tertiary notes along with the long-lasting fruit for which Amarone is famed.
Winemaking: oldish-to-old vines around the Negrar heartlands in Valpolicella Classica. Appassimento lasts 90 days, followed by a gentle crushing and slow, on-skin fermentation for a remarkably long 60 days (and sometimes longer). The oak ageing is long, 60 months in large-format Slavonian oak botti, before a year in bottle prior to release.
Assemblage: corvina 40%, corvinone 30%, rondinella 15%, oseleta 10%, croatina 5%.
Soil: clayish limestone.
Alcohol: 15.5%.
Colour: really genuinely dark red, starting to develop a little translucent garnet edge.
Aroma: exuberant red fruits, bright red and black cherries, wild strawberry and raspberry, with more tertiary notes like coffee and cocoa, as well as some intriguing aniseed elements.
Palate: power and finesse, fullness and freshness, with its tannins present but balancing to reveal an elegance and depth characteristic of the best vintages.
Ageability: will develop beautifully, with a peak of at least 10+ years after its vintage.
Pairing: more versatile than many, but still with the power to accompany an after-dinner mellow moment.
