Winemaking Process: The grapes for this wine are carefully selected and arranged in the fruttaio to ensure maximum evenness, optimal appassimento development and to encourage the growth of botrytis which further concentrates the sugar. By the end of January, the grapes are crushed and macerated for approximately 20 days, then fermented with native yeasts over a 45-day period. The wine is then aged in Slavonian oak barrels for a full 7 years, undergoing a gradual transformation into its final, complex form.
