Valpolicella DOC “Zèfiro” 2019 by Piccoli
Assemblage: Corvina 40%, corvinone 25%, rondinella 30 % and molinara 5%
Winemaking: The grapes are hand-harvested in late September and pressed immediately. Fermentation is temperature-controlled in stainless steel vats.
Ageing: Part stainless steel, part 12 months in barrel, followed by 3 months in bottle.
Colour: Ruby-red, violet around the rim.
Aroma: Bright, cherries and strawberries with a hint of dark spice and vanilla.
Palate: Fruit-forward, fresh but with a softness as well.
Pairing: Charcuterie, any cheese except blues. Could even benefit from being lightly chilled.
