“From Black to White” by Zymé
Zymé’s White “From Black to White” is, as the winery from Valpolicella itself likes to call it, “the wine that wasn’t there”. And the reason is easily explained, it comes from a natural genetic mutation undergone by the Rondinella vine which went from being a red grape to a white one; the “From Black to White” label plays on this line, with a contrast between black and white that alludes to the particularity of this kind of Rondinella.
But there is not only the Rondinella Bianca to contribute to the birth of this intriguing white wine. In the blend you also find Gold Traminer, Kerner and Incrocio Manzoni. The vines come from the vineyards of Negrar, Illasi and Tregnago, where the flat land gives way to gentle and soft hills that introduce us to the special terroir of Valpolicella.
Organic fertilization and manual pruning, fermentation in concrete tanks for 20 days and aging on the lees for at least 6 months: this is how Zymé’s White “From Black to White” is born, an intriguing white wine that immediately strikes thanks to the notes of white flowers, fruit, perennial herbs, acacia, primrose and apple, mint and vanilla.
