Stars from the Consorzio Tutela Vini Valpolicella, for Amarone della Valpolicella
A very good year. A dry spring, then a very rainy summer; quality varied from area to area.
An uneven year: dry until flowering, then very wet, with a harvest that varied from area to area.
January to May was drier and slightly warmer than usual. June to August brought 575 mm of rain at San Pietro in Cariano and 461 mm at Illasi, against about 230 mm in a normal year, with some hail in June and August. Downy mildew pressed hard after the rains, luckily once fruit set was over; later, botrytis and rot needed care, helped by the September weather. Picking began around 13 September.
Rosso “60-20-20” 2020 Veneto Igt 2020 by Zymé
The Rosso “60-20-20” Veneto IGT by Zymé is a structured and expressive red wine that brings together Cabernet Sauvignon, Cabernet Franc, and Merlot in well-defined proportions. Grown in the limestone and clay soils of Colli Berici, this wine benefits from a late harvest, allowing the grapes to develop richness and complexity. The Cabernet Sauvignon and Cabernet Franc are hand-harvested and pressed the same day, while the Merlot is left to dry in small crates for about 20 to 30 days before fermentation. The vinification process takes place in cement tanks with indigenous yeasts over a period of 40 days, followed by aging in new barriques for at least 30 months and an additional year in the bottle.
The deep ruby color, tending toward violet, develops garnet reflections over time. The nose is filled with aromas of wild berries such as blueberry, currant, and blackberry, enriched by hints of moss and spice. On the palate, it enters with a full and complex structure, showing depth and persistence. Notes of plum jam and ripe forest fruits are well-integrated with firm yet refined tannins. As the wine develops, delicate accents of pepper, perennial herbs, and earthy clay emerge, adding layers of character.
Best served at 18°C in a Ballon glass, it pairs well with grilled meats, roasted dishes, and medium-aged cheeses. The balance of fruit, structure, and acidity makes it a compelling expression of the Bordeaux blend in the Veneto region. With an alcohol content of 14.5%, a total acidity of 5.7 g/L, and a dry extract of 32 g/L, it carries both strength and elegance in equal measure.

Celestino Gaspari is at the core of Zýmē Winery’s identity and success in Valpolicella. Growing up in nearby Val d’Illasi, he learned the practical aspects of viticulture early on by working with his family, while formal studies in agronomy refined his technical skills. At 20, a pivotal opportunity arose when he began working with Giuseppe Quintarelli, a renowned figure in Veneto winemaking, where he not only mastered key production techniques but also formed a personal connection by becoming Quintarelli’s son-in-law. This period shaped his philosophy and set the stage for his future projects.
In 1999, Gaspari put his extensive knowledge to use by converting an ancient 15th‑century sandstone quarry in San Pietro in Cariano into the modern facilities of Zýmē Winery. The winery, named after the Greek word for yeast, symbolizes the natural fermentation process and serves as a reminder of the land’s enduring influence. The cellar’s design, with stone cladding and strategically placed steel openings that mirror the contours of a vine leaf, echoes both the local environment and the winery’s guiding principles.
Zýmē Winery spans 30 hectares of vineyards and produces roughly 150,000 bottles annually while adhering to sustainable agricultural practices and environmental care. Gaspari’s balanced approach combines time-honored techniques with careful experimentation. His methodical work has allowed him to capture the inherent qualities of the indigenous grape varieties and soils of Valpolicella, contributing significantly to the region’s reputation on the international stage.
Under Gaspari’s leadership, Zýmē Winery is recognized for its commitment to authenticity and quality. The wines are a true reflection of the local terroir, blending historical practices with modern methods to create products that stand as a reliable expression of Valpolicella’s unique character.
