Verona IGT “Syrah” by Zymé
The Syrah of the Zymè winery is produced with 100% Syrah grapes. After a rigorously manual harvest, the bunches are left to rest in “fruttai” for about a month; it is subsequently pressed and left to ferment in concrete tanks with indigenous yeasts for 40 days. Refined for 4 years in new oak barrels, it then continues to age for another year in the bottle.
