Valpolicella Classico is where the Nicolis range begins, a fresh red from the historic Classica hills around San Pietro in Cariano made from Corvina and its traditional partners. There is no drying and no heavy oak here, just the appellation’s bright, digestible style: delicate cherry fruit, a violet lift, light spice, soft tannins and a clean, dry finish the estate itself describes as harmonious.
It is bottled to be drunk young and often, the kind of red Veronese osterie pour by the glass all evening. Serve it slightly cool at 14 to 16 °C with salumi and cheeses, pasta e fagioli, bigoli in salsa, or Venetian sarde in saor; it will even sit beside baccalà mantecato without complaint. No decanting and no ceremony required; open it, pour it, and let the table do the rest of the work.
