Valpolicella Ripasso DOC Classico “Pruviniano” 2020 – MAGNUM

Valpolicella Ripasso Pruviniano applies the Veronese ripasso technique to fruit from the hills Domini Veneti bottles under the Pruviniano name. As is traditional for the appellation, the young Valpolicella is passed over the still warm marcs left from Amarone, setting off a brief second fermentation that adds alcohol, colour, glycerol and a dried fruit shade to the fresh cherry core.
The result sits between Valpolicella and Amarone in weight and mood: morello cherry and plum with raisin and cocoa undertones, rounded tannins and enough freshness to stay a food wine through a whole dinner. It is ready on release and will hold for several years. Serve at 16 to 18 °C with bigoli with duck ragù, guinea fowl, sausage and polenta, or Venetian style calf’s liver; it is also a reliable match for aged but gentle cheeses. Thirty minutes in a decanter does no harm at all.
