Originating from the picturesque Valpolicella Classica region in Fumane, our Amarone della Valpolicella DOCG by Monte Santoccio is a true embodiment of Italian winemaking excellence. Crafted with meticulous care and dedication, this exceptional wine is a blend of Corvina (40%), Corvinone (30%), Rondinella (25%), and Molinara (5%) grapes, culminating in a captivating 16% alcohol by volume.
The journey of this wine begins with hand-picked grapes, delicately sorted and placed in small crates. These crates find their place in our fruit drying room, where they patiently await until mid-January. The fermentation process unfolds in two distinct phases: first, a 20-day cold pre-maceration, followed by a 30-day alcoholic fermentation. This meticulous approach sets the stage for greatness.
Aging is a crucial aspect of our winemaking process, with this Amarone spending approximately 30 months in French and American oak tonneaux barrels, each with a capacity of 500 liters. The result is a wine of profound character.
