“Kairos” by Zymé
Zymè’s Kairos is an absolutely unique wine, a real mosaic of sensations and emotions.
It comes from at least 15 different grapes, 4 of which are white berried (Garganega, Trebbiano Toscano, Sauvignon Blanc and Chardonnay) and 11 red berried (Corvina, Corvinone, Rondinella, Cabernet Sauvignon, Cabernet Franc, Merlot, Syraz, Teroldego, Croatina, Oseleta, Sangiovese and Marzemino). Grapes that each bring their own, distinctive and unique characteristics. “Kairos” in ancient Greek means “convenient, opportune, for the right moment” and this Zymé wine embodies this very definition. A unique philosophy represented by the bottle label which represents a mosaic of patches of many colors, to testify the origin of the 15 different grapes, and a sundial that expresses the concept of exact time, as per the Greek definition. Elements that make it a fascinating wine, a perfect representation of the terroir of origin.
Speaking of vineyards here is difficult as each grape is born from a distinctive plot of land; all are located in the province of Verona and all are cultivated with organic fertilization and manual pruning, with a selection of the sprouts and strictly manual harvest. The harvest follows the different ripening times of the many grape varieties used. Vinified in steel and concrete tanks, it then goes on to ferment with indigenous yeasts for 20-25 days. After this period it is transferred to French oak barrels and rests there for at least 36 months, before spending another year in the bottle to stabilize. Thus was born one of the symbolic wines of this fantastic reality, a unique wine capable of giving fascinating and enveloping sensations.
