Stars from the Consorzio Tutela Vini Valpolicella, for Amarone della Valpolicella
An excellent year. A cold, wet spring, then a hot summer and a harvest right on time.
A cold, wet spring and a hot summer, with a harvest close to the average date.
After a warm, dry March, April and May were the coldest and wettest in 30 years. The summer was very hot, with heat waves at the end of June, peaking at 38°C, and at the end of July, plus some local hail. The spring rain carried the vines through a dry June. Veraison came late, ending in the last week of August; then good swings between day and night brought sound ripening and picking from mid September, a week later than in 2018. A quiet year for vine disease.
Amarone della Valpolicella DOCG “Campo Leon” by Ilatium
Winemaking Process: The grapes used for this wine undergo a careful winemaking process, starting with their destemming and pressing in the month of January. The pressed grapes then undergo cold maceration before being fermented for 20-30 days in controlled conditions. The fermentation process is carefully managed, with frequent pumping over and movement of the grapes, to ensure the full expression of their flavors and aromas. The temperatures during fermentation are kept between 18°C and 25°C.
Aging Process: The Amarone della Valpolicella by Ilatium Morini undergoes a unique aging process that sets it apart from other Amarones. The wine is aged for 30 months in a combination of French and North American oak barrels with capacities of 220-500 litres. This aging process imparts subtle notes of oak and vanilla into the wine, adding depth and complexity to its character. After this extensive barrel aging, the wine is then further aged for 8-10 months in the bottle, allowing it to develop even further and reach its full potential. The result is a beautifully crafted Amarone that showcases the best of the region’s winemaking heritage.
Grape Blend: This wine is a harmonious blend of 70% corvina and corvinone, 20% rondinella, and 10% croatina and oseleta.
Terroir: The grapes for this wine are grown in calcareous soils located over 200 meters above sea level, which imbues the wine with unique characteristics and adds to its complexity.
Alcohol Content: This wine has an alcohol content of 16.5%.
Appearance: With a clear, intense, and vibrant ruby red color, this wine is a feast for the eyes.
Aroma: The aroma of this wine is intense, complex, and almost rich, with perceived ethereal hints and notes of ripe red berries and cherry, with spicy notes of nutmeg, hints of cocoa, vanilla, and black pepper.
Palate: The wine’s palate is warm and smooth, with elegant tannins that are perceptible yet refined. This wine is full-bodied, offering a truly luxurious drinking experience.
Ageability: This wine has excellent aging potential, and will continue to grow and improve over the next 10-15 years.
Food Pairing: This wine pairs perfectly with the rarest and richest bistecca, offering a truly indulgent dining experience.

Ilatium Morini stands in Val di Mezzane, surrounded by vineyards and an early 1900s farmhouse that inspired Luigi and Giuseppe Morini in 1980. Their plan was simple: combine their lands and nurture grapes once sent to the local cooperative. Over time, seven Morini siblings and cousins joined, blending modern ideas with the family’s longstanding methods.
In 1992, more vineyards were added near the farmhouse, pointing the way to the official start of Ilatium Morini in 2001. Two years later, the first wine label was produced, with the original bottle still kept in the family archive. When the founders outgrew their first location, a new, contemporary facility was established in 2006, with further expansion in 2020 after restoring the farmhouse to include a Wine Shop and tasting rooms.
Harvesting still follows a hands-on approach, ensuring careful grape selection from drying to pressing and through fermentation. Various oak barrel sizes highlight each wine’s layers of flavour, including unexpected nuances. The estate includes La Calle, Sottomonte, Forade, Ai Progni, Leòn, Mezzane ai Monti, Grezzana, and l’Olivara, each site contributing distinct qualities. This mix of tradition and forward thinking defines Ilatium Morini, carrying on the family’s drive for authentic Verona winemaking.
