Amarone della Valpolicella Docg “Mithas” by Corte Sant’Alda
Corte Sant’Alda’s Amarone della Valpolicella “Mithas” is made from a blend of organic Corvinone 40%, Corvina 40%, and Rondinella 20% grapes, grown according to the principles of biodynamic agriculture in the DOCG region of Val di Mezzane in Veneto. The grapes are carefully selected and hand-picked, then placed in crates to dry for several months before being pressed. The wine is then fermented at low temperatures and undergoes a month-long fermentation maceration in wood, allowing the development of intense and unique aromas.
After fermentation, the wine is aged in oak barrels and barrels of varying sizes, allowing the tannins to extract and integrate differently depending on the barrel size. The wine is then aged for 36 months before being expertly blended and left to rest in the bottle for an additional six months, allowing it to achieve a perfect balance of softness and rare drinkability.
