Valpolicella DOC Ripasso Classico Superiore “Pojega” 2024
Pojega Valpolicella Ripasso Classico Superiore DOC is produced from estate grapes grown in Negrar, in the heart of the Valpolicella Classico zone, on clay-sandy soils with moderate limestone content. Vines are trained using the double Veronese pergola and simple Guyot systems, with ages reaching up to 50 years. The grapes are destemmed and undergo alcoholic fermentation for approximately 10 days at 25–28°C in stainless steel tanks, followed by malolactic fermentation. In spring the wine is re-fermented on the pomace left over from the production of the estate Amarone, the defining step of the Ripasso method that adds body, complexity, and depth. The wine then ages for at least 12 months in French oak tonneaux and larger Slavonian oak barrels, which qualifies it for the Superiore designation.
