About Nicolis

Nicolis Winery cultivates 49 hectares of estate vineyards in San Pietro in Cariano, right at the center of Valpolicella Classica. Since 1951, when Angelo Nicolis and his wife Natalia began bottling for the market rather than only family use, the estate has passed from Angelo to his son Giuseppe and now to grandchildren Angelo and Sofia, who farm with an eye to soil health and low‑impact methods.

Valpolicella Classica itself stretches like an open hand: five “fingers” form the parallel valleys of Fumane, Marano, Sant’Ambrogio, Negrar, and San Pietro in Cariano. Cool currents slide down from the Lessini Mountains while warmer breezes rise from Lake Garda, weaving together ideal microclimates on both foothill and hillside sites. Limestone and marl give Corvina, Corvinone, Rondinella, and Molinara their bright acidity and subtle mineral tones, the foundation of every Nicolis wine.

After careful hand selection, grapes for Valpolicella are de‑stemmed, gently crushed, and fermented in temperature‑controlled steel to preserve primary aromas. Bunches intended for Amarone and Recioto rest on open trays for about three months, losing moisture and concentrating sugars in the traditional appassimento. Pressing and a slow winter fermentation follow; Amarone then matures around 30 months in large Slavonian oak, while Recioto spends roughly six.

The result is a range that speaks clearly of Valpolicella Classica: fresh, structured Valpolicella; layered, long‑aged Amarone; and lusciously balanced Recioto, all crafted by a family whose hands have tended these valleys for three generations.
