Stars from the Consorzio Tutela Vini Valpolicella, for Amarone della Valpolicella
A very good year. Hot and dry, with an early harvest of sweet, deeply coloured grapes.
A hot, dry year with an early harvest and grapes rich in sugar and colour.
Little rain fell from the winter onward. Late frost in April damaged a small area near San Martino Buon Albergo. June to August were hot, at times with drought and some sunburn in mid June. Hail in late August and early September, mostly in Valpantena and the east, hurt quality rather than quantity. Corvina was picked in the first week of September, about ten days earlier than in 2016, with high sugar, low malic acid and very good colour potential. The heat kept most diseases away.
Amarone della Valpolicella DOCG Classico Riserva “Il Fornetto” 2017 by Accordini Stefano
The Amarone della Valpolicella Classico DOCG “Il Fornetto,” crafted by Accordini Stefano, stands out as a premier example of fine Italian winemaking. This red wine, known for its aromatic richness and robust vigor, is produced in limited quantities. It has the potential to age gracefully for up to twenty years, thanks to its structured flavor profile.
Oenological Practice:
The production process of “Il Fornetto” involves a meticulous selection of grapes, which are then placed in 6 kg trunks for a specific drying period in a fruit-room. This stage is crucial as it involves the transformation of sugars into glycerine by microorganisms like Botrytis Nobile, enhancing the wine’s complexity. The wine undergoes a detailed crushing, maceration, and fermentation process, resulting in a highly structured and aroma-rich character. A four-year aging period in oak barrels follows, where the wine completes its malolactic fermentation.
Tasting Notes:
“Il Fornetto” is characterized by a deep ruby red color and a broad bouquet that includes notes of cherry, dried fruits, vanilla, black pepper, and liquorice. The taste is full and robust yet marked by an elegant balance.
Food Pairings:
This wine is ideally paired with intense flavors such as 90% dark chocolate, game, or aged cheese, aligning with traditional Italian culinary practices.
Grape Varieties:
The blend comprises Corvina Veronese, Corvinone, and Rondinella grapes, each contributing to the wine’s distinctive flavor and aroma.
Serving Temperature:
For optimal enjoyment, “Il Fornetto” should be served at a temperature of 18°C.
Alcohol Content:
The wine has an alcohol volume of 16.5%.

Accordini Stefano: Family Tradition and High-Altitude Viticulture in Valpolicella Classica:
Accordini Stefano is a family-run winery in Valpolicella Classica, shaped by a long-standing commitment to quality and forward-thinking choices. Tiziano and Daniele saw the potential for growth and took steps to modernize production, refining vinification techniques, planting new vineyards, and updating the cellar while expanding into international markets.
A turning point came with the decision to move production to the high-altitude vineyards of Cavalo in the Fumane Valley at 550 meters above sea level. This choice brought new opportunities, allowing for wines with deeper structure, refined aromas, and natural freshness. The project was driven by Tiziano’s expertise in commerce and Daniele’s enological knowledge, supported by their wives, Eleonora and Raffaella, and the next generation, Giacomo, Paolo, and Marco, who continue to build on the winery’s progress.
High-Altitude Viticulture
Today, Accordini Stefano cultivates 25 hectares of vineyards at some of the highest elevations in Valpolicella Classica. The cooler climate and significant temperature shifts between day and night bring out layers of complexity in the wines, helping to shape their structure and aromatic depth. The family follows organic farming practices, ensuring that both sustainability and quality remain at the forefront of their work.
The estate is home to several vineyard sites, each offering distinct characteristics:
- Il Fornetto (planted in 1975) grows Corvina, Corvinone, Rondinella, and Molinara in deep, clay-rich soil, where old vines produce balanced and concentrated fruit.
- Tornidora, at 500 meters, features a mix of Corvina, Corvinone, and Cabernet Sauvignon, planted in limestone-rich soil that adds depth to the wines.
- Chiesa Vecchia, at 600 meters, produces Valpolicella Classico, with grapes that develop strong aromatics and natural freshness due to the altitude.
- Monte, located near Lake Garda, benefits from cooling winds, bringing structure and complexity to Corvina, Corvinone, Merlot, and Cabernet Sauvignon.
- La Cà, near the winery’s agritourism property, grows traditional Valpolicella varieties in skeletal, clay-based soil, ensuring deep-rooted vines with excellent fruit concentration.
With a focus on organic viticulture and energy-efficient practices, including a solar-powered agritourism facility, the Accordini family continues to refine their approach, producing wines that reflect the characteristics of their land while maintaining a balance between tradition and modern techniques.
