Valpolicella Classico Superiore DOC by Zymé
After 12 years of working on “Val”, the 2018 harvest marks a significant milestone for the Valpolicella Classico Superiore by Zymé. Celestino Gaspari, the owner of Zymé, had a clear goal from the very beginning – to express the blend and traditional method of Valpolicella Superiore at its highest level. With the 2018 vintage, it seems Celestino Gaspari has achieved just that.
As a result of this new level of awareness and confidence, Celestino Gaspari has decided to include “Valpolicella” on the label, giving the wine a specific identity and highlighting his personal interpretation of Ripasso. Every element of this wine is carefully considered and valuable, working together with his team to create a truly worthy final product.
The Valpolicella Classico Superiore 2018 is a wine that’s truly exceptional in both its vinification and maturation. In September-October, fresh grapes are fermented at natural temperatures, followed by a second fermentation on the skins of Amarone in January for around 15 days, in line with the classic Ripasso tradition. The wine is then aged for at least two years in large Slavonian oak ovals, before spending six months in the bottle.
The resulting wine is a perfect accompaniment to a variety of foods, including cold cuts, medium-aged cheeses, soups, and lighter meats. We recommend serving it at a temperature of 18°C in a balloon-shaped stemmed glass, which perfectly showcases the wine’s rich bouquet and smooth, seductive palate.
On the nose, the Valpolicella Classico Superiore 2018 offers notes of ripe cherry, morello cherry, and semi-dried plum, while the medium ruby red color tends towards garnet with ageing. On the palate, you’ll experience a smooth, appealing sapidity, along with impressions of ripe fruit and spice. This is a wine that’s sure to delight the senses and impress even the most discerning wine lovers.
