Stars from the Consorzio Tutela Vini Valpolicella, for Amarone della Valpolicella
An excellent year. A cold, wet spring, then a hot summer and a harvest right on time.
A cold, wet spring and a hot summer, with a harvest close to the average date.
After a warm, dry March, April and May were the coldest and wettest in 30 years. The summer was very hot, with heat waves at the end of June, peaking at 38°C, and at the end of July, plus some local hail. The spring rain carried the vines through a dry June. Veraison came late, ending in the last week of August; then good swings between day and night brought sound ripening and picking from mid September, a week later than in 2018. A quiet year for vine disease.
Valpolicella Ripasso DOC Classico Superiore “Arusnatico” by Valentina Cubi
Arusnatico represents the traditional Veronese style of Ripasso, where Valpolicella wine is refermented on the Amarone skins to add depth, texture, and complexity. Produced from organically grown grapes cultivated in Valentina Cubi’s estate vineyards in Valpolicella, this wine expresses both precision and harmony through careful vineyard work and respectful winemaking.
The blend combines 65% Corvina, 25% Rondinella, and 10% Molinara from vineyards planted on rocky, mineral-rich soils with densities between 3,000 and 5,000 vines per hectare. The vines, trained in pergola and guyot, are hand-harvested in mid-September. After destemming and crushing, fermentation takes place in temperature-controlled stainless-steel tanks. Once completed, the young Valpolicella is passed over the Amarone pomace for a short maceration of three days, allowing a gentle refermentation that enriches texture and body without overpowering freshness.
Afterward, the wine undergoes natural stabilization and malolactic fermentation before ageing for 12 months in used Tonneaux, with a small portion aged in new French oak. The result is a Ripasso that combines the finesse of Valpolicella with the fullness of Amarone influence.
In the glass, it shows a medium ruby-red hue. The bouquet reveals aromas of cherry, violet, and a touch of spice. On the palate, it is bright and savory, with lively red fruit and a mineral edge. The texture is supple and balanced, leading to a long, fruit-driven finish that remains fresh and elegant.
Excellent with grilled or roasted meats, lightly spiced dishes, and semi-hard cheeses.

Valentina and Giancarlo built their estate on ten hectares of prized Fumane hillsides, Monte Tenda, Monte Crosetta, and Rasso, first acquiring seven of them in 1969. Giancarlo’s family had farmed vines since the 1800s; Valentina brought a drive for organic practice that now defines every row. No herbicides or synthetic treatments touch the soil, and certification backs the farming philosophy they hope to pass on to coming generations.
The couple calls themselves wine craftsmen. All fruit comes from their own plots, clipped by hand and sorted bunch by bunch. Fermentations proceed with gentle handling, filling the cellar each autumn with scents of berries and blossoms. Before any bottle leaves the property, the family tastes and re-tastes, releasing each wine only when texture and balance meet their standard. Visitors are welcomed during harvest and throughout the year, a chance to share the season’s flavors and the quiet focus that guides their small, quality-centered operation in the heart of Valpolicella.
