Valpolicella DOC Superiore by Roccolo Grassi
This wine is made from about 50% fresh grapes and 50% slightly dried grapes. The slight dehydration of the grapes allows to change the skin/pulp ratio and therefore to maintain a very fresh fruit, but a little more concentrated and rich in noble components present in the skins. This is followed by a 20-month aging in wood, then assembly and bottling.
It is produced in a part of the vineyard designed to produce only Valpolicella, in which the grapes for Amarone are not selected; this allows to have more concentration, great complexity and aromatic finesse.
Deep ruby red colour. On the nose there are spicy notes of tobacco and white pepper, mineral notes of graphite, coffee, cherry and small red fruits. In the mouth it is fat, full-bodied, soft. It has a sweet tannin, but of great depth.
A very fine and complex wine, an ambitious Valpolicella with great character and personality, where the bottle aging improves its characteristics.
