Description

Valpolicella Doc Classico Superiore by Zymé

After 12 years of working on “Val”, the 2019 harvest marks a significant milestone for the Valpolicella Classico Superiore by Zymé. Celestino Gaspari, the owner of Zymé, had a clear goal from the very beginning – to express the blend and traditional method of Valpolicella Superiore at its highest level. With the 2019 vintage, it seems Celestino Gaspari has achieved just that.

As a result of this new level of awareness and confidence, Celestino Gaspari has decided to include “Valpolicella” on the label, giving the wine a specific identity and highlighting his personal interpretation of Ripasso. Every element of this wine is carefully considered and valuable, working together with his team to create a truly worthy final product.

The Valpolicella Classico Superiore 2019 is a wine that’s truly exceptional in both its vinification and maturation. In September-October, fresh grapes are fermented at natural temperatures, followed by a second fermentation on the skins of Amarone in January for around 15 days, in line with the classic Ripasso tradition. The wine is then aged for at least two years in large Slavonian oak ovals, before spending six months in the bottle.

The resulting wine is a perfect accompaniment to a variety of foods, including cold cuts, medium-aged cheeses, soups, and lighter meats. We recommend serving it at a temperature of 18°C in a balloon-shaped stemmed glass, which perfectly showcases the wine’s rich bouquet and smooth, seductive palate.

On the nose, the Valpolicella Classico Superiore 2019 offers notes of ripe cherry, morello cherry, and semi-dried plum, while the medium ruby red color tends towards garnet with ageing. On the palate, you’ll experience a smooth, appealing sapidity, along with impressions of ripe fruit and spice. This is a wine that’s sure to delight the senses and impress even the most discerning wine lovers.

About Zymé

Celestino Gaspari is at the core of Zýmē Winery’s identity and success in Valpolicella. Growing up in nearby Val d’Illasi, he learned the practical aspects of viticulture early on by working with his family, while formal studies in agronomy refined his technical skills. At 20, a pivotal opportunity arose when he began working with Giuseppe Quintarelli, a renowned figure in Veneto winemaking, where he not only mastered key production techniques but also formed a personal connection by becoming Quintarelli’s son-in-law. This period shaped his philosophy and set the stage for his future projects.

In 1999, Gaspari put his extensive knowledge to use by converting an ancient 15th‑century sandstone quarry in San Pietro in Cariano into the modern facilities of Zýmē Winery. The winery, named after the Greek word for yeast, symbolizes the natural fermentation process and serves as a reminder of the land’s enduring influence. The cellar’s design, with stone cladding and strategically placed steel openings that mirror the contours of a vine leaf, echoes both the local environment and the winery’s guiding principles.

Zýmē Winery spans 30 hectares of vineyards and produces roughly 150,000 bottles annually while adhering to sustainable agricultural practices and environmental care. Gaspari’s balanced approach combines time-honored techniques with careful experimentation. His methodical work has allowed him to capture the inherent qualities of the indigenous grape varieties and soils of Valpolicella, contributing significantly to the region’s reputation on the international stage.

Under Gaspari’s leadership, Zýmē Winery is recognized for its commitment to authenticity and quality. The wines are a true reflection of the local terroir, blending historical practices with modern methods to create products that stand as a reliable expression of Valpolicella’s unique character.
