Valpolicella Classico Superiore DOC “Ognisanti” by Bertani
A signature expression of Bertani’s plot of land in Tenuta Novare in Arbizzano di Negrar, from the Ognisanti vineyard, composed of eight terraces with a total of 2.92 hectares positioned above the Ognisanti church.
Assemblage: Corvina 95%, 5% rondinella
Winemaking: From soils of Eocene limestone, white and pinkish-white marl, with a thin effective depth (50 cm) and a sandy-silty texture. The vines are double-guyot trained. Following harvest, pressing and fermentation, the wine is aged in French oak barrels for 1 year followed by at least 6 months in bottle prior to release.
Colour: Intense, strong ruby colour.
Aroma: Rich, fresh fruit and spices.
Palate: Mouthfilling, well-balanced by the acidity, long and gratifying with biting tannins and a sapid finish.
Pairing: hearty primi would be perfect, pasta con ragù all’anatra for instance.
