Vintage 2021
From the vintage reports of the Consorzio Tutela Vini Valpolicella
A changeable year that ended well: a dry September gave healthy grapes.
A changeable season with late flowering and a dry September that gave healthy grapes.
March was very dry; April and May brought about 210 mm, close to normal, and June almost none. July to September had about 200 mm, some 50 mm below the average. Flowering came about ten days late and veraison about nine days late. Downy mildew needed precise work in May and June, and powdery mildew caused modest damage in a few sensitive spots. Dry weather in September kept botrytis away, and picking began around 15 September.
Valpolicella Ripasso Doc Classico by Giovanni Dindo
The Giovanni Dindo Valpolicella Ripasso DOC Classico Superiore draws from vineyards nestled in the historic hills of Valpolicella Classica. The blend of 70% Corvina Veronese, 25% Rondinella, and 5% Corvinone captures the heart of local tradition. Grapes are hand-harvested in October, then fermented for 10 days at controlled low temperature (18 °C). After the base wine rests through winter in stainless-steel vats, it undergoes a Ripasso: a second fermentation for 15 days on the Amarone pomace, which imparts greater structure, body and aromatic depth. The wine is then aged for 12 months in oak barrels, allowing it to develop refinement and complexity.
In the glass, the Valpolicella Ripasso offers a generous red wine experience. The nose reveals rich notes of caramel, white flowers and ripe cherry. On the palate, it is full, embracing and round, with velvety tannins and a long, lingering finish. This wine balances softness and structure: ideal with white or red meats, hearty dishes, and cheeses.

Cantina Giovanni Dindo is a family-run estate situated in the heart of the Valpolicella Classica region. From its origins in the vineyards of grandfather Giovanni, the estate has grown across generations, combining deep roots in the land with contemporary winemaking.
The vineyards stand on calcareous-clay slopes and terraces above the valley, benefitting from ideal exposure and a climate that supports full grape maturity. Every stage of the process, from hand-harvest to drying of the grapes to careful ageing, reflects a commitment to authenticity and excellence.
The Dindo family cultivates a direct relationship with the land and the seasons, believing that wine is a bearer of memories, emotion and connection.
