Description

Amarone della Valpolicella Docg Classico “Or’Jago” by Domini Veneti

Grape Composition
This Amarone is crafted from a blend of 60% Corvina, 15% Corvinone, 15% Rondinella, and 10% other indigenous varieties as per DOCG regulations. Each variety contributes to the wine’s complexity and depth.

Vineyard & Terroir
The vineyard is located in the heart of Valpolicella Classica, specifically in the hamlet of Jago, at an altitude of 200-250 meters. The vines, aged around 15 years, thrive on loamy-clayey, occasionally limestone-rich soil. They are cultivated using the Veronese pergoletta system, with a planting density of 3,300-3,500 vines per hectare, yielding approximately 20 hectoliters per hectare. This location’s southeast exposure and meticulous vineyard care ensure optimal grape ripening conditions.

Winemaking Process
The harvest begins in September and extends into early October, with only hand-selected grapes chosen for production. The grapes are left to dry in “fruttaio” drying rooms for 100-120 days. After drying, they undergo crushing and de-stemming in December or January. Fermentation occurs at controlled temperatures ranging from 12°C to 23°C. The maceration period lasts 35 days, with 15 of those days at cold temperatures, allowing for maximum extraction of color, tannins, and flavor. Manual punching-down is carried out three times daily. The wine undergoes complete malolactic fermentation and is aged in wooden barrels before being refined in bottles. No artificial stabilization is used, ensuring the wine’s natural integrity.

Tasting Profile
This Amarone stands out with its intense, deep ruby-red color. Its aroma is layered and refined, offering captivating notes of dried fruit, spices, vanilla, and subtle tobacco. The palate is bold and well-structured, showcasing sweet, smooth tannins that give the wine a velvety texture. The flavor profile reveals dried fruit, spice, and tobacco, all balanced with remarkable finesse and persistence.

Food Pairings
Amarone della Valpolicella Classico Or’Jago 2017 is a versatile wine that pairs well with hearty dishes. It complements game, braised meats, grilled red meats, and aged cheeses. It is equally suited for sipping on its own as a conversation wine, offering warmth and depth on colder evenings. Ideal serving temperature is 18°C to 19°C.

About Domini Veneti

Domìni Veneti traces its origins to 1933, when a group of local grape growers in Valpolicella formed the Cantina Sociale Valpolicella Negrar cooperative. Their aim was to protect the region’s vineyards and preserve its long-standing winemaking traditions. In 1936, an overlooked barrel of Recioto continued fermenting by mistake, transforming into the dry and aromatic red later named Amarone. This discovery sparked a new direction in Valpolicella winemaking.

By 1989, the cooperative launched Domìni Veneti as a focused line of premium selections, drawing its name from the historical period when the region belonged to the Republic of Venice. Today, the winery draws on decades of local know-how and a fortunate blend of soil and climate. Every step, from tending vines to cellar practices, respects nature’s own pace.

Red or white, sweet or dry, wines bearing the Domìni Veneti name arise from the Valpolicella Classica zone and other Veronese areas. Amarone stands out as the so-called King of Valpolicella, born from that accidental moment in 1936. Recioto remains a sweet red DOCG, prized for its deep hue and prolonged grape-drying process. Valpolicella and Ripasso recall methods rooted in earlier generations, while Custoza, Lugana, Soave, Bardolino, Bardolino Chiaretto, and Raudii IGT round out the range of regional offerings.

What unites them all is an approach guided by human skill and the natural environment. The soil, vines, and climate work together to form wines that share a strong connection with the place they come from. This balance of tradition and thoughtful progress defines Domìni Veneti, a name that continues to champion authentic Valpolicella wines and the land that inspires them.
